Thanks to the folks over at Foodimentary, I now know that today is National White Chocolate Day.
And even though I’m heading into Day 4 of 10 Days of Real Food, that doesn’t mean that you guys can’t enjoy some white chocolate goodness today!
During the summer, my friends at Attune Foods sent me some cereals to sample — as kind as they are, there was plenty to share at our GF Get Together in July and I brought these treats in August, they’re super generous like that.
This recipe is super simple, but seems a little fancy because you use the Erewhon Crispy Brown Rice Cereal w/ Mixed Berries. And when you top them with a white chocolate drizzle? Whoa. Get ready for the compliments!
Berry Good Crispy Rice Treats with White Chocolate Drizzle
6 cups Crispy Brown Rice Cereal w/ mixed berries
10.5 oz bag mini marshmallows (I used JetPuffed)
3 tablespoons butter
1 teaspoon vanilla extract
¼ cup white chocolate chips
Grease an 8 x 8 pyrex dish, or brownie pan and set aside. You can also do these in a 9 x 13, but I like the thicker pieces, so I go smaller and thicker.
SLOWLY melt marshmallows and butter in large pot over low heat — this is key, you don’t want them to brown or stick to the pan. Add vanilla extract and stir to combine. Then add cereal and quickly fold together to coat all of the cereal with the marshmallow mixture.
Press into greased pan — you can keep your fingers from sticking by dipping them in water, repeat as necessary to get them pressed into the pan.
While the bars are setting (this doesn’t take much time and to be honest I am usually eating them while they are still warm) melt the white chocolate baking chips in the microwave.
Drizzle bars with white chocolate, allow to set, then dig in!
*Sarah’s Note: I took the time to sort through the cereal and pick out some of the big berry pieces to sprinkle on top with the white chocolate drizzle.
It makes the colors pop out, but it is in no way necessary. (and some of them fell off) So don’t bother taking the time unless you just want a pretty picture… they get eaten really fast, and no one will probably notice. 😉
Also, these would be so tasty made with Erewhon Strawberry Crisp Cereal — which was my favorite cereal they sent over.
